This Festive Cocktail – How to Make It

WThis is a home-style version of a cocktail from the seasonal drinks list. This is a batch prepared mix that is loaded full of tastes of the Christmas time, rendering it perfect for your festive gathering. Save the extra citrus syrup you can use for breakfast cocktails, puddings, or to mix another batch of bikinis.

The Bikini Cocktail

Yields 10 people

For the Citrus Syrup (yields 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Premix (makes 850ml, to serve 10)

400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing

Method

For the Syrup: Combine the listed ingredients inside a pot, bring to a light boil, agitating until the sugar dissolves. After that, turn off the burner allowing it to cool fully. Pour into a sterilised bottle, close it and store chilled, where it will keep for up to one month.

Preparing the Cocktail Base: Pour all the spirits and syrup in a big jug, let it rest for an hour, then strain preferably using muslin, making it fully clarified.

When ready to serve: Pour 85ml of your cocktail base into your mixing glass filled with ice, and stir lightly for a minute to chill. Filter into a chilled martini glass or equivalent, top with some cranberries adding the final touch using a brief mist with the mandarin essence over the top.
